Coffee stains on carpet and sofas
Coffee is a tannin stain with milk and sugar mixed in. The milk is what makes it smell later.
A black coffee spill is a straightforward tannin stain. Blot it, dilute it with cool water, blot again, and most of it comes out. Coffee with milk or cream is a two-part problem: the tannin from the coffee and the protein from the milk. The protein is what turns sour and smells a few days later if it is not fully removed.
For a fresh spill, blot until nothing transfers. Mix a teaspoon of clear dish soap in a cup of cool water, apply with a cloth, blot, then rinse with plain water and blot dry. Do not use hot water on a milk-containing spill; heat sets protein.
On a sofa
Fabric sofas need extra care with moisture because water can leave a ring on the fabric as it dries. Work from the outside of the spill inward, use as little liquid as possible, and dry with a fan. Microfiber sofas are especially prone to water spotting. If the sofa tag says S (solvent only), do not use water at all.
Set-in coffee
Old coffee stains on light carpet respond to a tannin remover and an oxidizing rinse. On dark carpet they often disappear with a standard cleaning. The one to watch is a coffee stain that was cleaned with a household spray and now has a darker ring around it; that ring is soap residue attracting soil, and it needs a proper rinse to remove.
